Malt Analyser TMA
The THIEMT Malt Analyser TMA determines the ß-Glucan-content in malts straight and specifically and submits the exposured value to a following risk analysis:

Analysis periods of 20-30 minutes and an automated interpretation proceeding ensures quick and reliable results.

Analysis
Background:
Problems of the wort- and beer filtration may upset the process of brewing sensitively.
To be held responsible for these problems are ß-glucans with a molucular weight bigger 10.000 Dalton, because of their gel formation ability.
As natural cell wall components in the endosperm (nutritive tissue), the glucans will be cleared initially by specific activated enzymes at the malting. Now other enzymes (hydrolases, such as ß-glucan-solubilises, ß-glucanases) may attack unrestricted and decompose the cell wall polysaccharides in their components. If the germ process is finished to early, or a inhomogeneous malt quality is present, clusters of uncomplete dismantled cell wall splits are remaining, which may lead to the aforenamed problems.
Principle of Analyses:
The high molecular ß-glucans are initiated to the fluorescence by the Carlsberg calcofluoric-method and are proven specifically by the help of the image recognition. The bigger the fluorescent surface of the probed malt grain, the lower whose dialysis.
Afterwards, the surface of the fluorescent malt will be set into relation to the total fluoric solid. The received values will be classified. The statements of the homogeneity will be conducted by the classifications of the single grain analysis. Based on these values, the downstreamed risk analysis by Sarx/Rath hits statistical predictions for the processing- and filtration risk of the researched charge.
Sample preparation:
The punches of a sample will be prefixed in a kneading-plate and sanded off to the half by a grinding machine.
The halved farinaceous solids will be treated with a calcofluoric solution and Fast Green and added to the malt-analyser after a short drying time.
Measurement:
The malt analyser consists of a lightbox with white (halogen) and black (UV) illuminants and a superimposed digital camera. Under the UV-light, only the undissolved cell walls are fluorescing turquoise, the dissolved are appearing dark blue.
Digital picture shots of the punches will be made and analysed by the connected software.

Software TQS-TMA
The THIEMT quality system (TQS) is the basis for the software, which will be also applied in the control and evaluation of other THIEMT analyses systems.
The software will be delivered standardised in German and English; the attendance to other languages is possible by an integrated speech-module.
Update-guaranty: The system-set includes an update-guaranty – new software-versions are available for a free lifetime download.
